sun dried tomato and basil hummus


kari made the delicious falafel, and i made the hummus: basil, and sun dried tomato. you probably all have your own recipes/brands you swear by, but if not, here's my recipe:

2 cups chickpeas (i cook dried ones in a crockpot with salt and water)
1 cup water
2 handfuls fresh basil leaves, or 1/2 cup sun dried tomatoes
1 tsp. salt
fresh ground pepper
3 Tbs. extra virgin olive oil
2 Tbs. tahini
5 cloves garlic, pressed

puree in a food processor. you may want to taste as you go and adjust seasonings/ingredients to your own taste.

i've been meaning to ask you for your hummus recipe - is this the same one (like you'll remember) that kirk brought camping... last year or the year before?

before we always just made it up as we went along. we didn't have a recipe. this time i paid attention to what i was doing and wrote it down. so, this is probably similar, but not exact.

Those look soooooooooooooooo yummy. Dried garbanzo beans that you boil make a HUGE difference in the taste of the hummus, I'm with you Eva. My hummus recipe is about the same, minus the basil/tomatoes but plus cumin. And maybe more oil. I love it! Was the falafel from a box mix?

ooh, cumin. that sounds like a good idea. the falafel was from a box mix. i don't know which brand. it was so good, though.

i've never made falafel. the one time i tried to make it when i was 18, it caught on fire, and i threw it out the window of my second floor apartment. the blackened little carcasses stayed in the plant bed until the next spring. i guess that must have traumatized me, because i love falafel, but in the 10 years since that incident, have never tried to make it again.
