Mexican Pizzas

There really isn't much good mexican food here. I know a lot of people love it, but I'm not sold on that huge chain Chipotle. I want it to be like Cafe Rio, and it's not. I'd even love it if we could just find a place like Beto's ( that's how desperate I am), but no such luck. So we've been making our own uneducated verisons of mexican food. This is a fried tortilla topped with beans and cheese and broccoli (weird, i know, but good!), melted under the broiler and then pulled out and topped with fresh tomatoes and homemade guacamole. Uno mas?

Hope you don't mind two comments in one day...

Beans the Kris way:
get dried pinto beans, rinse them, soak them in water for about 4 hours-the water to beans ratio should be 3 to 1(soak them longer if you want to let them soak overnight). drain the water, put in fresh water so it rises above the beans just a little bit. put in freshly chopped onion and garlic (to taste), bring to a boil, then let simmer for 3-4 hours. salt to taste (they require a lot of salt). once you have good beans all you need is cheese, avocado and/or salsa, tortillas, and you have a tasty Mexican meal. it's what we're eating today!
